Pasta with Sweet Pepper Sauce
suitable for 6 1/2 months upwards
Pasta is a quick and easy food to prepare for your baby. Experiment with different shapes and sizes, but it is best to use small pasta, such as shells, bows or macaroni, which you can easily break up into even smaller pieces if necessary.
75gms Pasta Shapes
2 tsp Olive Oil
1/2 small leek (washed and chopped)
1 small red pepper (seeded and chopped)
1/2 small courgette (chopped)
4 Tbsp chopped tomato's (tinned without added salt)
1/4 clove garlic
1 tsp chopped parsley
1/2 tsp dried oregano or basil
1 Tbsp grated mild, hard cheese (such as cheddar)
Cook the pasta in the water until soft, according to the instructions on the packet
Drain well
Heat the oil in a small frying pan
Add the leek and pepper and cook for 5 minutes to soften
Add the courgette, tinned tomatoes, garlic and dried herbs and simmer gently for 15 minutes
Blend to a smooth sauce with a hand blender or in a food processor
Stir in the cooked pasta shapes and mash with a fork t break the pasta into smaller bits
Stir in the grated cheese until it melts
